Irish Potato Bread

Ingredients

Approx. 350g of peeled and chopped potato (this is about 4 smallish potatoes)
1 tbsp of butter
1 ½ tsp salt
1 cup of flour and a little extra for dusting
1 tsp baking powder

Directions

Boil the potato pieces until they are soft then drain and mash them with the butter and salt. Mix the flour and baking powder together then, with a wooden spoon, work the flour into the potato until soft dough forms. Tip out onto a workbench dusted with flour and cut into six equal pieces. Roll each piece into a 10 -12 cm diam circle, dusting with more flour if necessary. Cook in a medium hot pan until golden brown and then flip over to cook other side. These can be cooked in a dry pan or they may be fried in a little hot butter or oil.
