Roasted Garlic Potatoes, Asparagus, and Sausage

Ingredients

·1 pound baby potatoes, halved
·8 ounces carrots, halved and thinly sliced
·1 teaspoon dried basil, dried thyme, dried oregano, and paprika
·1/2 teaspoon onion powder
·Salt and pepper, to taste
·1/4 cup olive oil, separated
·8 ounces asparagus, ends trimmed
·1/2 large onion, thinly sliced
·1 package (13 ounces) skinless smoked turkey sausage
·1 tablespoon minced garlic
·1/3 cup freshly grated Parmesan
·Fresh parsley, optional for garnish

Directions

Preheat oven to 400 degrees F. In a small bowl, mix together the dried basil, thyme, oregano, paprika, onion powder, and salt/pepper. Place the potatoes and carrots on a lined baking pan. Pour 2 tablespoons olive oil and half of the seasoning mix on top. Toss to combine, then cook in the oven for about 20 minutes. Meanwhile, prepare asparagus by cutting into 2” pieces and slice the sausage into coins. Remove potatoes and carrots from the oven and carefully push them to one side of the pan. On the other side, add in the asparagus, onion, sausage, and garlic. Add remaining 2 tablespoons olive oil and remaining seasoning mix. Toss to combine, then toss those ingredients with the potatoes and carrots. Bake for another 10-15 minutes, or until veggies are roasted. Top with freshly grated parmesan and fresh parsley, if using. Then, enjoy!

Best meat money can buy and only meat to buy if you truly want to rebuild the environment and its resilience to climate change! Main issue is knowing which joint to defrost first hmmmmmmmmmm
