Persimmon and Apple Tart

Ingredients

3 persimmons cut into eight pieces or thin slices
3 eating apples cut into eight pieces or thin slices
¼ cup water
¼ cup sugar
2 sheets of pre-rolled puff pastry
4 tsp ground almonds
a little milk to glaze
Ice cream or yogurt to serve

Directions

Preheat oven to 200 C and prepare a greased flat baking tray

Place fruit in a saucepan and add water and sugar. Mix well and cook on a medium heat for 15 minutes. Remove from the heat and allow to cool, pouring off the excess juice. Lay out 1 sheet of puff pastry on the baking tray. Sprinkle over 2 tsp of the ground almonds and top with a layer of apples and persimmon. Then sprinkle over remaining ground almonds.

Cut strips about 2 cm wide from the second sheet of puff pastry. Arrange the strips over the fruit (criss-cross looks attractive) and press the edges down to seal. Brush over with milk and bake for 20-25 minutes until golden.

Delicious served with vanilla ice cream or yogurt.
