Ingredients

There is a few strange looking veg lurking in the veg box this week. Sticks/pencils among the veg box this week. They are salsify! A veg that isn’t as well known but easy to cook. The taste is described as Oyster! Parsnip! Celeriac! What will you think?
There are many ways to cook , feel free choose to pick one from the list.

Directions

1. Peel them and put them in a roasting tin, trickle over some olive oil and a few bashed garlic cloves and a bay leaf, and roast on 200oc for 20mins. Sprinkle with salt 2. Alternatively cook as above and sprinkle on some gremolata. Made from lemon zest, finely chopped garlic and parsley. 3. Peel grate and make a salsify fritter. 4. Peel boil/steam until tender, chop small and add to soups/stews. Or coat with a mustardy, garlic vinaigrette.
